Stuffed Pork Loin

  • 5 pounds whole pork loin (5-6 lb works great)
  • 1 pound White American Cheese Deli style
  • 1/2 pound Prosciutto ham (Thin sliced deli style)
  • Sauce
  • 16 ounces Cream cheese
  • 1/2 cup Salted butter
  • 6.5 ounces Jar of pesto
  • 6 ounces Baby Spinach
  • 1 tablespoon Minced garlic
  • 6 ounces Shredded parmesan cheese
  • 6 ounces Shredded mozzarella cheese
  • 1 pinch Salt (To taste)
  • 1 pinch Pepper (To Taste)
  1. Trim fat and silver skin from pork loin

  2. Butterfly pork loin until unrolled and flat

  3. Add spinach, salt, pepper, butter and minced garlic in a pot and cook down until spinach is completely tender. 

  4. Process spinach in food processor until chopped but not liquid. 

  5. Put processed spinach back in put and add cream cheese. Cook on medium until cream cheese is smooth. 

  6. Add parmesan and mozzarella cheeses and cook until melted. 

  7. Layer prosciutto ham on top of flattened pork loin

  8. Pour cheese sauce on top of ham and smooth out across the loin

  9. Layer overlapping slices of White American cheese on top of sauce

  10. Roll up and tie with twine

  11. Smoke at 300 degrees until internal temperature is 145 degrees

  12. Rest for 10 minutes and slice before serving.
