World’s Best Smoked Macaroni and Cheese Recipe

Ingredients
  • 16 ounces Rotini Pasta
  • 2 teaspoons Olive oil
  • 8 ounces Velveeta cheese
  • 8 cups Sharp cheddar cheese, grated
  • 2 cups Mayo
  • 2 cups Sour cream
  • 1 tablespoon Onion powder
  • 1 teaspoon Tony Chachere's creole seasoning
  • 3 cups Cheez-it brand cheese crackers crushed into big pieces
Instructions
  1. Preheat smoker to 275

  2. Cook rotini according to package directions adding olive oil to water: 

  3. Drain and rinse pasta. Set aside

  4. Mix all other ingredients EXCEPT crackers in a bowl

  5. GENTLY stir in pasta

  6. Pour mixture into a greased 9x13 pyrex or stone dish or disposable aluminum cooking pan. 

  7. Top with crushed crackers

  8. Smoke for 1 hour.
